... Read moreIf you're looking to add some variety to your egg sandwich, consider experimenting with different types of bread, like whole grain or sourdough, to enhance the texture. You can also spice things up by adding a dash of paprika or a little mustard to the mayo mixture for extra flavor. For a healthier twist, try using Greek yogurt instead of mayonnaise to reduce fat while keeping creaminess. Adding crunchy vegetables like finely diced bell peppers or pickles can also give the sandwich a refreshing bite. When boiling eggs for the sandwich, I find that placing eggs in cold water and bringing it to a boil, then letting them sit covered off the heat for 10 minutes, results in perfectly cooked hard-boiled eggs with firm whites and creamy yolks. This recipe is versatile and great for meal prepping. You can make the filling ahead of time and store it in an airtight container in the fridge for a couple of days, making lunch packing a breeze. Don’t forget to toast your bread lightly for a warm and crunchy contrast to the creamy egg filling. This small step makes the sandwich feel extra special and satisfying.
