When I first tried making this vegetable soup, I was pleasantly surprised by how easy it was to prepare while still delivering a rich and satisfying flavor. The combination of kale and frozen edamame not only boosts the soup’s nutrition but also adds an enjoyable texture. I particularly liked the addition of vegan jerky—it gives a meaty chewiness that makes the soup feel hearty and filling without any animal products. Using Kanel Hawaiian Poké 'Ono seasoning really elevates the flavor profile. It offers a unique, slightly smoky and savory note that complements the soy sauce and paprika beautifully. Adding fresh chives at the end provides a mild oniony freshness that brightens up each spoonful. To make this soup a go-to in my kitchen, I recommend prepping the vegetables in advance. The carrots and potatoes hold up well to simmering, becoming tender but not mushy after the 35-minute cook time. The kale wilts perfectly, infusing the broth with its earthy taste. One tip for those who enjoy a bit of spice: adding a pinch of crushed red pepper flakes during simmering can add warmth without overpowering the other ingredients. This recipe works great as leftovers, as the flavors deepen when the soup is stored overnight. It’s also very versatile—feel free to swap out vegetables based on what you have on hand, or try adding a handful of cooked grains like barley or quinoa for extra substance. Overall, this vegetable soup feels like a wholesome and comforting meal perfect for any day of the year. It’s quick, simple, and packed with plant-based goodness, making it easy to recommend for anyone looking for a tasty vegan soup option.
