Black Burger with In N Out Style sauce

🖤 Black Burger Buns

For the starter (sponge):

• 1 cup warm water (250 ml)

• 1 cup warm milk (250 ml)

• 2 ¼ tsp active dry yeast (7 g / 1 packet)

• 2 tbsp sugar

For the dough:

• 5 ½ cups all-purpose flour (700 g)

• 3 tbsp food-grade activated charcoal powder (25 g)

• 1 ½ tbsp sour cream

• 1 ½ tbsp vegetable oil (20 g)

• 2 tbsp unsalted butter, melted (30 g)

• 1 ½–2 tsp salt

Directions:

1. Make the sponge: In a bowl, mix warm water, warm milk, yeast, and sugar. Let sit 10–15 minutes until foamy.

2. In a large bowl, combine flour, food-grade activated charcoal powder, and salt.

3. Add the sponge, sour cream, vegetable oil, and melted butter. Knead into a soft elastic dough.

4. Cover and let rise for 1–1 ½ hours until doubled in size.

5. Divide into 8–10 portions (about 3–3.5 oz / 80–100 g each). Shape into buns.

6. Place on a baking tray, brush with water or egg wash, and sprinkle sesame seeds.

7. Let rise again for 15–20 minutes.

8. Bake at 340°F (170°C) for 25–30 minutes.
