There’s nothing quite like a steaming bowl of homemade soup to chase away the chill, and after trying countless recipes, I've truly fallen in love with this spicy roasted tomato soup. What really makes this recipe stand out is the roasting process. It’s a game-changer! When I first started making tomato soup, I’d just simmer everything on the stove, but once I tried oven roasting those beautiful ripe tomatoes, onions, garlic, and even that jalapeño, there was no going back. The way the vegetables caramelize and intensify their flavors at 400°F for 45 minutes to an hour is pure magic. It gives the soup an incredible depth and sweetness that you just can't achieve otherwise. Plus, the aroma filling my kitchen while they roast? Absolutely divine! I often get asked about the spice level, and that’s one of my favorite parts about this homemade spicy tomato soup—it’s so customizable! If you love a serious kick, definitely leave all the seeds in your jalapeño, or even add another half. For a milder warmth, you can remove the seeds, or even swap out a portion of the jalapeño for a mild green chili. Sometimes, I’ll even throw in a pinch of red pepper flakes after blending for an extra burst of heat. It all depends on what I’m craving that day. Beyond the core ingredients, I’ve experimented with a few additions that take this roasted veggie tomato soup to the next level. While Roma tomatoes are fantastic, using high-quality San Marzano tomatoes (canned whole, then drained) can yield an even richer, sweeter base. I’ve also found that adding a small red bell pepper or a few mini sweet peppers alongside the tomatoes enhances the roasted sweetness even further. Don't be afraid to toss in other herbs like a sprig of fresh rosemary or thyme with your basil during the roasting stage; they add another layer of savory complexity. And for an extra creamy texture without adding dairy, sometimes I’ll blend in a small roasted sweet potato or a handful of soaked cashews. This isn't just a basic oven tomato soup recipe; it’s a canvas for comfort. While crusty bread is a classic pairing, I love serving this hot tomato soup with a gourmet grilled cheese sandwich for the ultimate cozy meal. A sprinkle of fresh parmesan, a dollop of pesto, or a swirl of high-quality olive oil on top right before serving elevates it beautifully. I also often make a double batch because it freezes wonderfully. Just let it cool completely, portion it into freezer-safe containers, and you’ll have a delicious, warming meal ready for those busy weeknights. Just reheat gently on the stove, perhaps with a splash of extra broth if it's too thick after thawing. Trust me, once you try this method, you'll be making your own spicy roasted tomato soup all winter long!
