• 1 large salmon fillet (skin-on)

• 1 cedar plank (soaked in water for at least 1 hour)

• 2 tbsp olive oil

• 2 cloves garlic (minced)

• 1 small onion (thinly sliced)

• 1 tsp smoked paprika

• 1 tsp dried oregano

• ½ tsp sea salt

• ½ tsp black pepper

• ½ tsp crushed red pepper (optional)

• 1 tbsp lemon juice

• 1 tbsp honey or maple syrup

Instructions:

1. Prepare the Cedar Plank: Soak the cedar plank in water for at least 1 hour (or overnight) to prevent burning.

2. Preheat the Grill or Fire Pit: Set up an outdoor grill or fire pit and heat it to medium-high (about 375-400°F).

3. Season the Salmon: Pat the salmon dry and rub it with olive oil. Sprinkle garlic, onion slices, smoked paprika, oregano, salt, pepper, and crushed red pepper. Drizzle with lemon juice and honey.

4. Place on the Plank: Put the salmon fillet skin-side down on the soaked cedar plank.

5. Grill with Indirect Heat: Place the cedar plank on the grill or near the fire’s indirect heat. Close the lid if using a grill and cook for 15-20 minutes until the salmon is flaky and cooked through.

6. Check for Doneness: The salmon should reach an internal temperature of 130-135°F (it will continue cooking slightly after removing from heat).
