Beef pozole 🍲
I’m vegan but my girlfriend (now fiancée) isn’t. I do a majority of the cooking so I’m always looking at easy ways to meal prep. This one took the cake. I was able to do two hours of prep (and six hours for the beef to cook on low) to make a variation of meals prepped for the week ahead.

I like to stir in some fresh spring onions right before serving or when portioning out for extra freshness and a little bite. I've even used the leftover broth (strained) as a flavorful base for a quick noodle soup, adding some ramen noodles and leftover veggies.
