Mexican Street Corn Pasta Salad
INGREDIENTS
16 Oz Rotini pasta
12 Oz fire roasted corn
1 Cup Mayo 1/2 Cup sour cream
2 Limes juiced
1/2 Cup Cotija cheese
1 Tsp each onion powder, garlic powder, ground cumin, chili powder 1/2 Tsp cayenne pepper
1/4 Cup red onion
4-6 green onions cut
1/4 Cup cilantro Tajin for garnish
DIRECTIONS
🔥 Cook your pasta. Boil your chosen pasta in salted water according to the package directions until al dente. Drain, rinse briefly under cold water, and let cool completely in a large bowl.
Cook your corn as directed on bag and set aside to cool.
Make the dressing mix together Mayo, sour cream, lime juice, Cojita cheese, and seasonings listed above. Mix real well.
Mix It up In your large bowl, add the cooled pasta to the dressing. Then add the charred corn, red onion, green onions cilantro, and a 1/2 cup cotija cheese.
