Poke Bowl 🍚🌺🍣

If you have never had a poke bowl you need to try this recipe. It’s so easy and full of flavor. You can have this done in about 20 minutes. With it being healthy, fresh, and refreshing, it makes it the perfect summertime dish. This dynamic dish lets you choose whatever protein you’re into. No matter what protein you choose it is sure to elevate your meal.
Ingredients:
Rice:
1 cup minute rice
1/2 tsp rice wine vinegar
1/2 tsp sugar
Salt to taste
Toppings:(pick whichever you like, about 1/4 cup each per bowl)
Sweet kernel corn
Edamame
Sliced Red onion
Shredded carrots
Sliced jalapeños
Diced mangos
Sliced cucumbers
Fresh pickled ginger
Avocado
Diced Green onion
Tempura flakes
Sesame seeds
Protein:(pick whatever you like. About 5 oz per bowl)
Chicken
Salmon - cooked if not sushi grade
Ahi tuna - cooked if not sushi grade
Tofu
Crab stick
Spicy sauce: 1/4 cup Mayo, 1 tsp siracha or gochujang, 1/8 tsp garlic powder & Onion powder
*after you cook protein add spicy sauce to it to make it have a nice kick* set aside.
*raw sushi grade salmon or tuna also tastes great!*

Teriyaki
Eel sauce
Spicy Mayo (spicy sauce listed above)
Soy sauce
Ponzu sauce
Gochujang
My go to bowl is rice, red onion, carrots, jalapeños, corn, edamame, green onion, crab stick, pickled ginger and chicken in spicy sauce. Topped with teriyaki, ponzu, gochujang, and tempura flakes 🧅🥒🥕🌽🐓
Directions:
1. Cook minute rice as package says. Once rice is cooked, add vinegar, sugar, and salt. Set aside
2. Cook your protein on the stove. Season with salt & pepper. If you want it to be spicy combine cooked protein with spicy sauce from above.(combine off stove after protein is cooked).
3. In a bowl place rice on bottom, cooked protein on top, add any toppings you like and finish it with any sauces you like.

If you're using cooked salmon or chicken, a little garlic powder and onion powder (which are already in the spicy sauce, but can be added directly to the protein before cooking) can really deepen the savory notes. For a more Japanese-inspired flavor, a dash of shichimi togarashi (Japanese seven-spice blend) sprinkled on top of your protein or even mixed into your spicy mayo can add a fantastic, complex heat with citrusy undertones.
