Baked Boursin Pasta with Chicken
Easy and delicious pasta recipe that comes together In no time. A couple of years ago baked Feta pasta was everywhere, I love it but I like to switch it up a bit and use Boursin instead of feta, it’s so creamy and delicious.

Okay, so like many of you, I was obsessed with the baked feta pasta trend a few years back. But let me tell you, swapping out feta for Boursin cheese in this baked pasta with chicken recipe? Absolute game changer! I've been making this creamy, dreamy dish on repeat because it's just so incredibly simple and satisfying, especially after a long day when I want something delicious without a ton of fuss. It truly feels like a gourmet meal, but it comes together with minimal effort, making it my go-to for a cozy weeknight dinner. What I love most is how versatile it is. While the original recipe is fantastic, I've played around with it quite a bit to suit my family's tastes and what I have in the fridge. For instance, if you're looking to sneak in some extra greens, adding a handful or two of fresh spinach right after the tomatoes and Boursin come out of the oven is a brilliant move. The residual heat wilts the spinach perfectly, adding a lovely freshness and a pop of color that makes you feel a little healthier. I've also tried it with kale, wilting it down beforehand, and that's equally delicious. And speaking of variations, while chicken breast is great, sometimes I swap it for boneless, skinless chicken thighs. They tend to stay a bit juicier and more tender, and they cook up beautifully alongside the pasta. Just adjust the baking time slightly if needed, ensuring they reach that internal temperature of 165°F. For a pescatarian twist, I've even made a version with shrimp! Just toss raw shrimp with a little olive oil, garlic powder, and paprika, and add them to the baking dish with the tomatoes and Boursin during the last 10-15 minutes of baking, or cook them separately on the stovetop and stir them in at the end. It creates an entirely different, but equally delightful, meal. Many of you might be wondering about a "one-pan" version, and while this recipe technically uses two baking trays (one for the chicken, one for the pasta sauce), it's still incredibly low-effort cleanup. I find baking the chicken separately ensures it cooks evenly and gets that nice seasoning crust, preventing it from getting waterlogged from the tomatoes. However, if you're truly aiming for minimal dishes, you could try baking the chicken directly in the same larger baking dish alongside the tomatoes and Boursin. Just make sure the chicken pieces are cut smaller and well-spaced, and keep an eye on the cooking times to ensure everything is perfectly done. Alternatively, you can cook the chicken on a sheet pan with parchment paper for easy cleanup and simply transfer it to the pasta dish afterward. To make this dish even simpler on busy evenings, I often prep my ingredients ahead of time. Dicing the onion, mincing the garlic, and halving the cherry tomatoes can all be done earlier in the day. The chicken can be seasoned and ready to go. When it's dinner time, it's just a matter of assembling and baking! You could also experiment with different Boursin flavors, like the Shallot & Chive, for a subtle twist. This pasta pairs wonderfully with a simple side salad and some crusty bread to soak up all that amazing creamy sauce. And if you happen to have any leftovers (which is rare in my house!), they reheat beautifully the next day for a quick lunch. Just add a splash of chicken broth or water when reheating to bring back some of that creaminess. Trust me, once you try this baked Boursin chicken pasta, it's going to become a regular in your meal rotation!
