Broccoli Cheddar Soup🥣🥦🧀
Ingredients:
- 1 tbsp butter
- 1 yellow onion, finely chopped
- 1/4 cup butter
- 1/4 cup all purpose flour
- 2 cups chicken broth
- 2 cups half and half
- 1-2 heads broccoli or 12 oz bag frozen broccoli, roughly chopped
- 2 carrots, peeled and finely chopped
- 2 cups cheddar cheese, shredded
- Seasonings I used- salt, pepper, paprika, garlic and herb, caramelized onion butter, ground mustard)
Directions:
1. Add 1 tbsp of butter to a large pot over medium heat. Add chopped onion and sauté until onions are soft and translucent. About 2-3 minutes.
2. Add your 1/4 cup of butter to the pot. When melted, add your flour and whisk together. Let mixture cook for about 1 minute while constantly whisking.
3. Slowly pour in about a cup of chicken broth, whisking as you pour. Continue with remaining chicken broth and add your half and half. Pour slowly and whisk as you are pouring.
4. Let your mixture cook for a minute or two and whisk often to make sure there are no remaining lumps.
5. Add broccoli and carrots, stir to combine. Add all your seasonings. Reduce heat to low/medium low and simmer for about 10-15 minutes or until thickened and your broccoli/carrots are tender. If your soup is too thick, add a splash of chicken broth or half and half until you get to the consistency that you want.
6. Blend up your soup until desired consistency. You can use an immersion blender, I normally just use a masher.
7. Slowly add your cheddar cheese, stirring to melt after each handful. Taste your soup and add any additional seasonings if needed.
