I found this recipe on tiktok a while back and have been using it ever since because it’s so easy
Ingredients:
- 1.5 pounds of Yukon gold potatoes
- 1 pound lean ground beef
- taco seasoning packet (2)
ideas for topping:
- guacamole/ plain avocado
- pico
- shredded cheese
- sour cream
Recipe:
preheat oven 425. wash and dry potatoes. Cut them into small cubes, put them into a bowl with a little bit of olive oil and taco seasoning, then mix it well until potatoes are evenly coated. Put them on parchment paper on top of a cookie sheet. Cook them for 30-35 minutes.
While that is cooking, cook ground beef then follow instructions on taco seasoning. Once everything is done, plate potatoes then beef on top and add the toppings of your choice.
