I think these hand pies are one of my faves I’ve made recently. I’ve actually had them on my baking list for a long time. I made a version of them ages ago (like prob 5+ years ago) but wasnt really happy with the end product or the photshoot of them so I never posted them. So I’m really excited i finally got around to doing a redo. I also really like how it looks like they’re zombie or mummy like or crying bloody tears. Really fits the Halloween theme i was going for. I used @thestarlino maraschino cherries to make these - there’s a link in my bio for the ones I used.
Eyeball cherry hand pies
- pie crust, homemade or store bought (I used 2 sheets of premade pie crust)
- Cherry pie filling
- Maraschino cherries for the eyeball
- Egg wash
- White chocolate
Preheat oven to 375 degeees f. Use a round cookie cutter (I used a 3in cookie cutter) to cut out an equal amount of circles. Place half of them on a cookie sheet. Brush the outer edge with egg wash then add a spoonful of cherry pie filling in the center. Add the other circle on top and use a fork to press them together. Cut 2 slits in the shape of an x in the middle of the top pie crust. Add a maraschino cherry in the middle of the pie crust where the slits are. With your remaining dough use a small circle cookie cutter to cut out the eyelid. You may have to adjust the shape or size a little depending on the size of your hand pies and cherries. Brush pie crust with egg wash then place the eyelid on top of the cherry. You can also add a lower lid if desired. At this point you can chill them for a bit if you feel your pie dough is too warm. Otherwise bake at 375 degrees f for about 15-20 min or until golden brown. Let cool then use melted white chocolate to add some little eye details. I added a dot on each cherry eyeball and also a line under each eye.

Making Halloween-themed treats like eyeball cherry hand pies adds a fun twist to traditional baking, especially when the appearance matches the spooky season. When I tried these hand pies, I found that using premade pie crust saves time and still delivers great flakiness. For the filling, a good quality cherry pie filling combined with bright maraschino cherries creates a vibrant eyeball effect that's really striking when baked. One tip I learned is to chill the pies before baking if your kitchen is warm—this helps keep the crust from becoming too soft, allowing better shaping and a crisp, golden finish. Cutting slits in the top crust in an 'X' shape not only lets steam escape but also provides a natural spot to nestle the cherry, enhancing the eyeball illusion. Decorating with melted white chocolate added fine details that made the pies look finished and eerie, perfect for Halloween parties or fall gatherings. Experimenting with the size of the cookie cutters can give different hand pie sizes, so feel free to adjust based on your preferences. These treats pair well with a warm beverage on a chilly autumn evening and are great for impressing guests with creative baking ideas.
