Making it from apple scraps is an excellent way to reduce waste and create a natural, preservative-free product. To start, use fresh apple scraps—cores, peels, or any leftover pieces. Place them in a clean jar and add filtered water to cover the scraps completely. It’s important to use non-chlorinated water to encourage natural fermentation. Cover the jar loosely with a cloth or paper towel secured with a rubber band to allow airflow while keeping out dust and insects. Fermentation occurs in two main stages: an initial alcoholic fermentation where natural sugars are converted into alcohol, followed by acetic acid fermentation where alcohol transforms into vinegar. During the first stage, keep the jar at room temperature (around 60-80°F) away from direct sunlight. Stir the mixture every few days to aerate and prevent mold formation. After about three weeks, strain out the apple solids to avoid spoilage and return the liquid to the jar for the second fermentation. The second stage can take several more weeks, during which the liquid will become cloudy and develop a strong vinegar scent. Taste periodically; when the flavor is sharp and tangy enough, the vinegar is ready. Pour it into bottles with tight lids and store in a cool, dark place to maintain its quality. Homemade apple cider vinegar retains the “mother,” a combination of beneficial bacteria and enzymes that appears as a cloudy, stringy substance. Incorporating the mother boosts the vinegar’s probiotic properties. With patience and care, turning simple apple scraps into rich, tangy vinegar is a rewarding process that supports sustainability and provides a healthy kitchen staple.
