Recipe: Zero-Waste Homemade Apple Cider Vinegar

Ingredients:

* Apple cores and peels

* 2 tablespoons sugar to each cup water (or honey, optional)

* 1 cup to 2 tablespoons sugar Filtered water (enough to cover the apples)

* Optional: 2 tablespoons store-bought apple cider vinegar (for starter culture)

Instructions:

1. Place apple cores and peels in a clean glass jar.

2. Dissolve sugar in enough water to cover the apples, then pour over the apple scraps.

3. Add 2 tablespoons of raw apple cider vinegar to kickstart fermentation.

4. Cover the jar with a cloth or paper towel secured with a rubber band.

5. Let sit at room temperature for 2-3 weeks, stirring every few days.

6. Taste occasionally; once it reaches a tangy vinegar flavor, strain out the solids.

8. Store the finished vinegar in a sealed bottle at room temperature.
