Wellness Reset Chia Parfait
Part of my wellness reset means creating from scratch.
This vegan chia pudding parfait is layered with homemade cranberry jam, blackberry applesauce, pistachios, and dark chocolate — the perfect way to end my night before a 16-hour fast.
My wellness reset hasn’t been perfect, but I’ve been intentional — and that’s what it’s really about.
Not avoiding bumps in the road, but keeping your steps moving in the right direction.
For the cranberry jam, I boiled fresh cranberries for about 10 minutes with orange peel and lemon peel to brighten the flavor.
I sweetened it with cane sugar and maple sugar, added a pinch of pink salt to round it out, and thickened it with chia seeds instead of flour because it’s more beneficial.
Once it got too thick, I balanced it with some of my homemade blackberry applesauce.
Chia pudding is so easy — just chia seeds, oat milk, and maple syrup.
Let it sit a couple hours, then layer it up.
Perfect as a dessert, snack, or something quick to take on the go.
So tell me sis… how has your wellness journey been going? 🌱

One of the things I’ve truly enjoyed about creating this vegan chia parfait as part of my wellness reset is how customizable it is. By making the cranberry jam from scratch, using fresh cranberries boiled with orange and lemon peel, I get a vibrant, tangy flavor that complements the natural sweetness of the maple and cane sugars. Instead of traditional thickeners like flour, I use chia seeds to add both texture and nutritional benefits—rich in omega-3s, fiber, and antioxidants. Balancing the thickened jam with homemade blackberry applesauce adds natural sweetness and a smooth contrast, making the parfait layers satisfyingly complex. Adding crunchy pistachios and a sprinkle of dark chocolate on top elevates the experience with healthy fats and a bit of indulgence, which keeps the treat balanced and enjoyable. I love that this parfait fits perfectly into an intermittent fasting routine by serving as a light but nutrient-dense way to break my fast or as a wholesome nighttime snack. The ease of preparing the chia pudding — just mixing chia seeds with oat milk and maple syrup and letting it sit — makes it doable even in busy schedules. Plus, it’s portable, so it works for on-the-go lifestyles. What’s most important in my wellness journey is the intention behind each step. It’s not about perfection but consistency and nourishing my body with plant-based, homemade foods that feel good. If you’re exploring your own wellness reset, consider how making simple nutrient-rich treats from scratch can deepen your connection to your health goals and bring joy to everyday eating.
