I think this might be a bit different than the original recipe but I love the little tweaks I’ve made. It’s now one of my favorites to have in the spring and summer.
Ingredients:
2 Large Zucchinis
½ box of angel hair pasta
Butter
Freshly grated parmesan cheese
Pine nuts
Red pepper flakes
1-2 cloves of garlic
Cook your pasta like normal
Cut your zucchini into thin pieces as I recommend getting them a little brown to give it more flavor. Cook your zucchini in a pan with the garlic and allow your zucchini to get to a bit brown.
Roast your pine nuts in a small pan on the stove, be sure to keep stirring them or moving them around so they don’t burn. Once they are fragrant or roasted to your taste set them aside.
You can assemble the pasta all together or set up individually and allow people to add as much of each as they’d like.
Combine pasta with butter and allow it to melt into the pasta, next add your Parmesan cheese (as much or as little as you like) mix it all together when the butter and cheese are well incorporated into your pasta. Then add your zucchini and pine nuts. Top off with more Parmesan and some red pepper flakes and enjoy.
