Over folding causes the batter to become too runny, and your cookies may lose their iconic feet and smooth tops. Under folding leaves you with lumpy, stiff batter that doesn’t pipe well. A good test is to lift the spatula and check if the batter flows like lava; it should slowly ribbons off and gradually blend back. Additionally, factors like humidity and oven temperature can affect your success. I learned that resting the piped batter until a skin forms can prevent cracks during baking. Tapping the tray lightly removes air bubbles and ensures even rising. By paying close attention to these details—egg white consistency, gentle but thorough folding, and proper resting—you can significantly reduce common macaron failures.
