Ingredients:
4 jumbo potatoes, 1 lb cubed chicken breast, 6 bacon slices, 1 cup broccoli, 1 small onion, 1 bell pepper, 2 tsp minced garlic, 1 cup heavy cream, 1 cup cheddar cheese, 1/2 cup Italian cheese, 1 tsp each salt, pepper, garlic powder, onion powder, Italian seasoning, olive oil.
Optional: sour cream, green onions.
Instructions:
1 Preheat oven to 400°F. Rub potatoes with oil, salt; bake 50–60 min.
2 Cook bacon until crispy; crumble, reserve 2 tbsp grease.
3 Season chicken with 1/2 tsp each salt, pepper, garlic powder, onion powder, Italian seasoning. Cook in bacon grease 6–8 min.
4 Sauté onion, bell pepper, garlic 4–5 min; add broccoli, cook 3–4 min. Season with 1/4 tsp salt, pepper.
5 Heat cream; stir in cheeses, remaining seasonings until smooth.
6 Slice potatoes, fluff insides, top with veggies, chicken, bacon, cheese sauce.
7 Garnish with sour cream, green onions. Serve hot!
Tips: Broil potatoes for crispy skins. Swap Italian cheese for mozzarella. Use half-and-half for lighter sauce.
