Thai Satay Chicken (creamy, glossy + BIG flavour)
This is one of the easiest + most flavour-packed dinners I’ve made this week.
Coconut milk, curry, peanut, lime… it comes together in 20 minutes and tastes like takeout but fresher.
Served mine with crispy potatoes and it was PERFECT.
Save this for your next weeknight dinner ✨

If you're looking to elevate your weeknight dinners with bold Southeast Asian flavors, this Thai Satay Chicken recipe is a perfect choice. The combination of coconut milk, curry powder, and peanut butter creates a luscious, creamy sauce that envelops the tender chicken, delivering a burst of flavor with every bite. One tip I've found helpful is to be patient while simmering the sauce; this step thickens the sauce to that signature glossy texture you see in restaurant-quality satay dishes. Using chicken thighs instead of breasts adds extra juiciness and depth to the dish. Marinating the chicken for at least 15 minutes helps the curry and garlic penetrate the meat, enhancing the overall taste. When searing the chicken, make sure your oil is hot to get a beautiful caramelized edge, which complements the sauce well. The crispy potatoes served alongside add a delightful contrast in texture and soak up the sauce brilliantly. Tossing the boiled-and-steamed potato wedges in chili flakes, white pepper, and a touch of salt before air frying creates a spicy, flavorful crust without much fuss. For an extra flavor boost, try the optional garlic chili butter glaze—it adds a savory, mildly spicy finish that ties the whole meal together. For those wanting to customize, you can experiment with different nut butters or add fresh herbs like Thai basil or mint for a refreshing twist. This recipe isn’t just quick; it also invites you to travel through food, experiencing authentic Thai tastes from the comfort of your home kitchen.
