Charred cabbage with romesco sauce and scallion white miso vinaigrette
I don’t cook much with vegetables, so I decided to give charred cabbage a real try. As I was building the dish, I kept thinking about what would actually complement the cabbage — and landed on romesco. But romesco alone felt incomplete to me; it needed acidity and freshness to balance it out, which is where the scallion white miso vinaigrette came in.
Three components, three jobs: the cabbage brings char and bitterness, the romesco brings richness, and the vinaigrette cuts through both with brightness. Simple dish, but every part is doing something.
