The Ultimate Chipotle Chicken Salad Sandwich
This is my go-to recipe when I want something that feels like a gourmet deli lunch but takes minimal effort to throw together. I love it because it strikes the perfect balance: you get that smoky, creeping heat from the chipotle, a bright zing from the lime, and a serious crunch from the fresh veggies. Plus, using Greek yogurt keeps it light and protein-packed without sacrificing that signature creamy texture we all crave in a chicken salad.
Ingredients
The Base:
• Shredded Chicken: 2 cups (rotisserie chicken works perfectly here)
• Celery: 2 stalks, finely diced
• Red Onion: 1/4 cup, finely minced
• Cilantro: 1/4 cup, fresh and chopped
The Chipotle Lime Dressing:
• Mayonnaise: 1/4 cup
• Plain Greek Yogurt: 1/4 cup
• Chipotle Peppers in Adobo Sauce: 1–2 peppers, minced (plus a teaspoon of the sauce!)
• Lime Juice: 1/2 lime, freshly squeezed
• Garlic: 1 clove, minced
• Smoked Paprika: 1/2 tsp
• Salt & Black Pepper: To taste
For Serving:
• Sourdough or your favorite bread, toasted
• 1 ripe avocado, mashed
Instructions
1. Prep the Dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, minced chipotles, lime juice, garlic, and smoked paprika. Taste and season with salt and pepper.
2. Combine: In a large mixing bowl, toss the shredded chicken, diced celery, red onion, and cilantro together.
3. Mix: Pour the dressing over the chicken mixture and fold until everything is evenly coated and creamy.
4. Assemble: Spread a generous layer of mashed avocado onto a slice of toasted bread. Pile on a thick layer of the chipotle chicken salad and top with the second slice of toast.
5. Serve: Slice it down the middle and enjoy!
