VEGAN Raja Tacos 🌮

i’m not a big cook, but every once in a while i’ll chef it up in the kitchen!! here’s a recipe for some vegan raja tacos - optionally, you can add meat or vegan meat to amp up the protein.

what you need:

1/2 cup spanish rice

2 poblano peppers (cut into strips)

1 yellow onion (thinly sliced)

frozen corn (mine is the roasted one from trader joe’s)

1 avocado (halved and then diced)

1 scallion (trimmed and thinly sliced)

1 lime (juiced, then half cut into wedges for serving)

corn tortillas

vegetable oil for roasting the veggies

salt and whatever other spices you’d like

how to make:

cook the rice by combining it with 1 cup water in a saucepan - bring to a boil then cover, reduce heat, and cook until the water is absorbed. then roast your veggies (corn, onion, pepper) with the oil in the oven. make the avocado mixture by mashing the avocado with scallion, lime juice, cilantro (optional), and salt (or whatever other seasoning you’d like. finally warm up the tortillas in the oven for about 5 mins, then assemble and serve!
