Raw Vegan Mushroom asada tacos

Mushroom Asada:
• 5 oz shiitake mushrooms (best to freeze and then defrost for texture)
• 1/3 yellow onion sliced thin
• 1/2 bell pepper sliced thin
• 1/3 cup fresh orange juice (none of that fake sh*t)
• 2 tbsp liquid aminos (or substitute: soy, tamari, coconut aminos)
• juice of 1 key lime
• 3 cloves garlic chopped
• 1/2 jalapeño chopped
• some cilantro leaves (about 1/4 cup)
• 1.5 tsp cumin
• 1.5 tsp smoked paprika
• .5 tsp chipotle powder
🦋 mix all together in bowl
🦋 you could potentially eat this as is OR
🦋 in the dehydrator for 2 hours (recommend)
Plantain Tortillas:
• 2 ripe yellow plantain
• Pinch of salt
• Sprinkle of garlic powder
• Sprinkle of onion powder
• 2 tbsp olive oil
• Some lime zest (optional)
🦋 blend in food processor until all incorporated
🦋 spread as uniformly as possible on dehydrator sheet
🦋 118 degrees in dehydrator (*flip after 1 hour*)
🦋 dehydrate for 6-7 hours (check it/flip it twice more)
🦋 makes about 4 tortillas
