🍯🥜 Trisha Yearwood’s Butterscotch Bars ✨

These cozy dessert bars bake up chewy with melty butterscotch chips and finish with a warm peanut-butter glaze. Super easy and perfect for potlucks, game nights, or cozy weekends.

⏱ Ready in about 40 minutes

🍰 Makes about 15–18 bars

🧈 Difficulty: Easy

🛒 INGREDIENTS

Bars

• ½ cup unsalted butter, softened (plus extra for greasing pan)

• ½ cup granulated sugar

• ½ cup packed brown sugar

• ½ cup creamy peanut butter

• 1 large egg (room temp if possible)

• 1 tsp vanilla extract

• 1 cup all-purpose flour

• 1 tsp baking soda

• ¼ tsp salt

• ½ cup quick-cooking oats (not old-fashioned)

• 1 cup butterscotch chips (about 6 oz)

Peanut Butter Glaze

• ¼ cup creamy peanut butter

• 1 cup powdered sugar

• 4 Tbsp milk (add slowly)

👩‍🍳 DIRECTIONS

1️⃣ Preheat oven to 350°F. Butter a 9×13 pan and set aside.

2️⃣ In a large bowl, beat together:

• softened butter

• white sugar

• brown sugar

• ½ cup peanut butter

Mix until fluffy and smooth.

3️⃣ Beat in egg + vanilla.

4️⃣ In a separate bowl, whisk together:

• flour

• baking soda

• salt

Stir oats into the dry ingredients.

5️⃣ Slowly mix dry ingredients into wet ingredients until just combined.

6️⃣ Spread batter evenly into prepared pan.

7️⃣ Sprinkle butterscotch chips over the top.

8️⃣ Bake 20–25 minutes, until edges are golden and center is set.

🍯 Make the Glaze (while bars are hot!)

9️⃣ Whisk together:

• powdered sugar

• milk

• remaining ¼ cup peanut butter

Add milk gradually until smooth and spreadable.

🔟 Spread glaze over warm bars so it melts slightly into the top.

1️⃣ 1️⃣ Let cool completely, then slice into squares.

💡 HELPFUL TIPS

✨ Use quick oats only — old-fashioned oats make these too chewy

✨ Don’t overbake — center should look just set

✨ Glaze goes on WARM bars for best texture

✨ For cleaner slices, chill 20 minutes before cutting

✨ Optional upgrade: sprinkle flaky salt on top for sweet-salty vibes

... Read moreIf you’ve ever craved a dessert that’s both comforting and packed with rich flavors, Trisha Yearwood’s Butterscotch Bars are a must-try. The combination of chewy bars loaded with melty butterscotch chips and topped with a smooth peanut butter glaze creates a dessert that satisfies both the sweet and nutty cravings. From personal experience, I found that using quick-cooking oats rather than old-fashioned oats is key to achieving the perfect chewy texture without it becoming too dense or tough. It’s also essential to watch the baking time closely; pulling the bars out of the oven when the center is just set ensures a soft, moist bite rather than a dry crumb. An important tip I discovered is to apply the peanut butter glaze while the bars are still warm. This allows the glaze to slightly melt into the surface, creating a glossy, luscious top layer that makes every bite extra delightful. For those who want to elevate this dessert further, sprinkling a pinch of flaky sea salt on the glaze adds a beautiful contrast that enhances both the sweetness and the peanut buttery flavor. These bars are incredibly versatile. They’re perfect for game nights, potlucks, or simply an indulgent weekend treat. In fact, I often prepare a batch ahead of time, chill them for an hour, and then slice them into neat squares, which makes serving them easier and keeps the glaze intact. This recipe’s approachable ingredients and straightforward steps make it accessible even for novice bakers. The blend of butter, sugars, and peanut butter creates a rich base that supports the butterscotch chips wonderfully, resulting in a harmonious dessert everyone will love. Give this recipe a try—you might end up making these bars your new favorite sweet treat!
