• 1 prepared 9-inch chocolate cookie crust
• 2 cups root beer, divided
• 2 tablespoons unflavored gelatin (about 2 packets)
• ¼ cup cold water
• 1 cup heavy whipping cream
• ½ cup granulated sugar
• 1 teaspoon vanilla extract
• 1 cup vanilla ice cream, softened
• Whipped cream + maraschino cherries (optional garnish)

👩🍳 Directions
1️⃣ Sprinkle gelatin over cold water in a small bowl. Let bloom for 5 minutes.
2️⃣ Heat 1 cup root beer over low heat until warm (do NOT boil). Remove from heat and whisk in gelatin until fully dissolved.
3️⃣ Stir in remaining 1 cup root beer. Let cool completely to room temperature.
4️⃣ In a large bowl, whip heavy cream, sugar, and vanilla until medium-stiff peaks form.
5️⃣ Gently fold cooled root beer mixture into whipped cream.
6️⃣ Fold in softened vanilla ice cream just until combined.
7️⃣ Pour filling into chocolate crust and smooth the top.
8️⃣ Refrigerate at least 4 hours (overnight is best).
9️⃣ Garnish with whipped cream and cherries before serving 🍒
