CREAMY MEXICAN
STREET CORN
CUP (Elote Cup)
INGREDIENTS
4 cups sweet corn kernels (fresh, grilled,
canned or frozen
3 tbsp butter
3 tbsp mayonnaise
½ cup Mexican crema (or sour cream)
½ tsp chili powder
Juice of ½ lime
1 bunch of epazote
HOW TO MAKE
Melt butter in a pan over medium heat, add 16 oz of water Boil the corn for ten minutes with epazote for more tasting (you can find epazote at any Mexican grocery store)
Drain the corn and stir in mayonnaise & crema until creamy.
Add chili powder, lime juice, and salt.
