Blueberry Pie Bombs
Ingredients:
1 1/4 cups (150g) all-purpose flour
1/2 teaspoon (2.5g) baking powder
1/4 teaspoon (1.25g) salt
1/2 cup (113g) unsalted butter, chilled and cubed
1/4 cup (50g) granulated sugar
1/4 cup (60ml) ice water
1 (14.5 ounce) can (411g) sweetened condensed milk
2 cups (240g) fresh or frozen blueberries
1/4 cup (50g) granulated sugar
1 tablespoon (15ml) lemon juice
1 teaspoon (5g) cornstarch
1 tablespoon (15g) all-purpose flour
1/2 cup (120ml) heavy cream
Powdered sugar, for dusting (optional)
Directions:
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together flour, baking powder, and salt. Cut in the chilled butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

8. Fold the dough over the filling to form a half-moon shape, crimping the edges to seal.
9. Place the pie bombs onto the prepared baking sheet.
10. Bake for 15-20 minutes, or until golden brown.
11. While the pie bombs are baking, whip the heavy cream until stiff peaks form.
12. Let the pie bombs cool slightly on a wire rack. Serve warm or at room temperature, topped with whipped cream and a dusting of powdered sugar, if desired.
