And after many delicious (and sometimes messy) experiments, I've finally nailed a recipe that's super easy and delivers every single time. Forget the frozen stuff – once you try these homemade crispy fried cheese sticks, you'll never go back! What You'll Need for My Crispy Mozzarella Sticks (and Mozzarella Balls!): Mozzarella: This is key! I usually grab a pack of low-moisture, part-skim mozzarella sticks. If you want to learn how to make mozzarella balls for frying, you can use fresh mozzarella, but make sure to pat it very dry first. Or, simply cut a block of low-moisture mozzarella into stick shapes or small cubes/balls. Freezing them for at least 30 minutes (or even an hour) before breading makes a huge difference in preventing them from melting too fast during frying. Breading Station: All-purpose flour (about 1/2 cup) 2 large eggs, beaten with a splash of milk or water Panko breadcrumbs (about 1 cup) – these are my secret for extra crispiness! You can also mix in some Italian seasoned breadcrumbs for more flavor. Oil: Vegetable, canola, or peanut oil for frying. About 3-4 cups for deep frying, or less for pan frying. My Super Simple Steps to Fried Mozzarella Perfection (A Foolproof Fried Mozzarella Recipe!): Prep Your Mozzarella: As mentioned, freeze your mozzarella sticks or balls for at least 30 minutes. This helps them hold their shape and ensures the cheese doesn’t melt out before the breading gets crispy. Set Up Breading Station: Get three shallow dishes ready. Put flour in the first, beaten eggs in the second, and Panko breadcrumbs (seasoned if you like!) in the third. Double Dip for Extra Crisp: This is crucial for that amazing crispy texture. Take a frozen mozzarella stick, dredge it in flour (shake off excess), then dip in egg, then coat thoroughly in breadcrumbs. Repeat the egg and breadcrumb step again! Yes, a double coat! This creates a strong barrier for the cheese and gives you that extra crispy mozarella you crave. Gently press the breadcrumbs onto the sticks to make sure they adhere well.
