Taco Ranch Bites

Ingredients:

1 lb ground beef

1 packet taco seasoning

1/4 cup water

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (frozen or canned)

1/2 cup diced tomatoes (drained)

1/2 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1/4 cup ranch dressing

1 package wonton wrappers

Cooking spray

2 tablespoons chopped green onions (optional)

Fresh cilantro for garnish (optional)

Directions:

Preheat oven to 375°F (190°C).

In a skillet over medium heat, cook ground beef until browned. Drain excess fat.

Stir in taco seasoning and 1/4 cup water. Simmer for 3-4 minutes until mixture thickens.

Add black beans, corn, and diced tomatoes. Stir well to combine. Remove from heat.

Mix in ranch dressing and both cheeses.

Spray a mini muffin tin with cooking spray.

Press one wonton wrapper into each muffin cup.

Fill each cup with 1-2 tablespoons of the beef mixture.

Bake for 12-15 minutes or until edges are golden and crispy.

Let cool slightly, then garnish with green onions and cilantro if desired. Serve warm.
