Short Rib Lasagna
Ingredients:
Short Ribs
Ricotta cheese
Mozzarella cheese
Parmesan cheese
1 stick of Butter
1 Egg
1/2 cup of milk
1/2 Cup of flour
Lasagna pasta
4 stalks of Celery
1/2 cup Carrots
1/2 Onion
5 minced Garlic cloves
3 Tbsp Tomato paste
2 cups Beef stock
1/2 cup red wine
1 cup Tomato puree or Passata
28 ounce can Peeled tomatoes
Bay leaves
Thyme
Basil
Parsley
Lemon
Seasonings:
Salt
Pepper
Nutmeg
Onion powder (optional)
Recipe:
-Start by seasoning your short ribs with salt and pepper
-Preheat oven to 350°
-add your short ribs to a pan on medium high eat and allow them to sear on each side until brown
-Remove your short ribs from the pan and add olive oil
-add diced onion, carrots, and celery to your pan and cook for about three minutes on medium heat
-Add tomato paste to pan and stir until slightly browned
-add minced garlic to pan and cook until fragrant
-add wine
-Add in chopped tomatoes
-add tomato purée or Passata
-Add in beef stock
-add salt, pepper and onion powder(optional)
-stir and bring to a simmer
-Add in your short rib bone facing up (if not deboned)
-Add thyme, basil, and bay leaves
-cover your pan and place in oven for 2 1/2 to 3 hours, checking occasionally to assure short ribs do not stick to pan.
-while meat sauce bakes in oven, you can make your béchamel(optional) and your ricotta cheese sauce as shown below
Béchamel:
In a sauce pan on medium heat, add butter, equal parts flour and milk, nutmeg, and salt. Stir until a thick milky consistency. Set aside.
Ricotta sauce:
In a bowl at ricotta cheese, chopped parsley, one egg, lemon juice, Parmesan cheese, salt, and pepper.
-once your meat has baked for 2 1/2 to 3 hours remove from oven and allow to simmer on stove.
-Remove Thyme, basil, bay leaves
-debone the short ribs. The meat should be tender to the point that bones fall off easily.
-shred short rib meat. You can do this with two forks.
-Add salt and pepper to taste.
-cover and allow sauce to simmer while cooking your lasagna noodles
-use preferred pan size (I used 9 inch by 11 inch pan)
-add meat sauce as your base then lasagna pasta, béchamel, ricotta cheese sauce, and then meat sauce again.
-Top meat sauce with mozzarella cheese then repeat this step two more times (3 layers of lasagna noodles), except for when you add your final layer of meat sauce do not top with mozzarella cheese just yet
-cover your pan and add pan to oven and allow to cook on 350° for 45 minutes
-after 45 minutes remove pan from oven and top with final layer of mozzarella cheese
-leaving off aluminum foil , place back into oven and allow to cook for 10 to 15 minutes on 425°
-Occasionally check oven so that top layer of lasagna does not burn
-removed from oven and allow lasagna to rest for 10 to 15 minutes before garnishing with basil and parsley and serving.
