Cinnamon roll French Toast Rollups
There’s no such thing as too much cinnamon sugar! This recipe is full of the nostalgic flavor of waking up with the sweetness flowing in the air letting you know breakfast is here!
Ingredients 🥣:
1/2 cup + 2 tablespoons unsalted butter, softened
1/4 cup light brown sugar
1 tablespoon cinnamon
8 slices thick, soft bread
2 eggs
1/4 cup milk
1 teaspoon vanilla extract
Assembly:
1/4 cup granulated sugar
1 teaspoon cinnamon
1-1/2 tablespoons unsalted butter, softened
1/2 cup cream cheese, room temperature
1/4 cup confectioners’ sugar
Directions
Step 1: Make cinnamon butter and bread
Start by mixing the butter, light brown sugar and cinnamon in a bowl until combined. Then, cut the crusts of your bread. Roll each slice into a flat piece and spread the cinnamon butter mixture in a thin layer across the surface. Roll tightly.
Step 2: Create your French toast
Combine the eggs, milk and vanilla in a bowl and whisk. Dip each roll into the mixture—there’s no need to soak. Just pop ’em in and out. Make sure the entire roll is coated.
Melt the butter in a pan and fry each roll until golden on all sides.
Step 3: Make the coating and icing
For the coating, combine sugar and cinnamon in a bowl. Drop each roll into the mixture and turn to cover completely. Set aside.
For the icing, mix softened butter, cream cheese and confectioners’ sugar until well combined. Place in a piping bag to drizzle over your rolls or in a separate dish to dip.

Okay, so you've tried the Cinnamon Roll French Toast Rollups recipe, right? Aren't they just so yummy and totally addictive? I mean, that cinnamon sugar coating and the creamy icing? Pure breakfast heaven! I often find myself craving them on lazy weekend mornings. But sometimes, I get a little creative in the kitchen and think, 'How can I make this even more decadent and special?' That's where a little secret ingredient comes in, especially if you’re curious about exploring richer flavors: mascarpone cheese! If you're looking to elevate these already amazing rollups, particularly if you're a fan of super rich and luxurious textures, mascarpone is truly a game-changer. It’s often described as cream cheese’s richer, silkier, and slightly sweeter Italian cousin. Why Mascarpone for Your Rollups? Mascarpone is an Italian curd cheese, but its texture is more like a very thick, soft cream. It has a higher fat content than regular cream cheese, which gives it an incredibly smooth, velvety consistency and a subtle, almost buttery sweetness. While the original recipe's cream cheese icing is fantastic, adding mascarpone or even substituting it can transform your topping into something truly gourmet. It adds a depth of richness that perfectly complements the warm spices of the cinnamon roll French toast. Two Delicious Ways to Incorporate Mascarpone: Decadent Mascarpone Cream Cheese Icing: This is my absolute favorite way to use it! Instead of just cream cheese for the icing, try a luscious blend. For the icing in the original recipe, you can modify it like this: 1/4 cup cream cheese, softened to room temperature 1/4 cup mascarpone cheese, also at room temperature 1/4 cup confectioners’ sugar (or adjust to your preferred sweetness) 1-2 tablespoons unsalted butter, softened (optional, for an extra layer of richness) Whip these ingredients together using an electric mixer until the mixture is super smooth, airy, and creamy. The mascarpone contributes an incredible silken texture and a subtle, rich flavor that enhances the cinnamon roll essence beautifully. Generously drizzle this over your warm Cinnamon Roll French Toast Rollups – trust me, it’s a taste sensation that will impress anyone! Surprise Mascarpone Filling Variation: Feeling a bit more adventurous? You could even create a delightful mascarpone filling for the inside of your rollups. After spreading the cinnamon butter mixture on your flattened bread slices, you can add a thin, even layer of sweetened mascarpone. Simply mix 1/2 cup mascarpone with 2 tablespoons confectioners’ sugar and a tiny splash of pure vanilla extract. Carefully spread this mixture over the cinnamon butter before tightly rolling up your bread. This creates a wonderful, creamy surprise right inside each bite, making them even more indulgent. Just be mindful not to overfill, as it might gently ooze out during the frying process. A Few Handy Tips for Working with Mascarpone: Always ensure your mascarpone (and cream cheese, if using) is at room temperature before mixing. This prevents lumps and ensures the smoothest, silkiest consistency. Because it's quite rich, a little mascarpone goes a long way in adding luxury without overpowering other flavors. Mascarpone is a fresh cheese and quite perishable, so keep any unused portions refrigerated in an airtight container and aim to consume it within a few days for the best quality. Beyond the mascarpone twist, remember that presentation and extra toppings can make these even more special! A sprinkle of fresh berries like juicy strawberries or tart blueberries, a handful of toasted pecans or walnuts for crunch, or even a light dusting of cocoa powder can add another dimension. Whether you stick to the classic version or dive into a decadent mascarpone-enhanced treat, these Cinnamon Roll French Toast Rollups are guaranteed to become a cherished staple in your breakfast or brunch repertoire. Enjoy experimenting and happy cooking!
