Cheesy chicken and potatoes
Ingredients:
- Chicken Breast [at least 4-5 for family]
- White potatoes [amount depends on chicken- at least 3/4 amount of chicken or half and half]
- Whipping cream (you don’t need, but for enhanced taste-can use milk instead)
- 1 block cream cheese
- Mozzarella cheese
- Parmesan cheese
- Olive oil
- 2-3 bags frozen broccoli (this is the side I picked)
Seasonings I used for potatoes:
- Paprika
- Italian
- Garlic
- Himalayan Salt
Seasonings I used for chicken:
- Paprika
- Italian
- Lemon Pepper
**Just use Himalayan salt for broccoli**
Instructions:
Starting with potatoes-
- Pre heat oven to 400 degrees F
- Cover large sized pan with foil and cover in olive oil
- Wash and cut potatoes into bite size
- Spread them on the pan and season them evenly, covering each potato
- Place in oven for 30 min
- Once 30 mins are finished, get spatula and move potatoes around
- Set timer for 15 more min
Next Broccoli-
- Cover pan with foil and olive oil on top
- Evenly cover with Himalayan salt
- Place in oven for remaining potato time
- Move broccoli around at 30 mins with spatula as well
- Set for 15 more mins
Last is Chicken:
- Cut chicken into bite size pieces while removing fat
- Season chicken evenly across while in pan
- Cook a little over medium for 15-20 min
- Once fully cooked, add cream cheese block in 3 different sections, then whipping cream until it covers the bottom
-Add milk into the mixture to cover the bottom of the pan into a thinner liquid. (You may have to do this a couple of times- enough where cheese can thicken the mixture.)
- Add potatoes
- Add both kinds of cheese
