Cheesy Mashed Potatoes
INGREDIENTS
—3lbs of golden potatoes; peeled & quartered 🥔
—32oz of chicken broth or enough to cover peeled/quartered potatoes
—1/2 stick of butter 🧈
—1/2 block of cream cheese
—1/2 c of sour cream
—1/2 c of mayonnaise
—1/2 c of heavy cream
—2 c of shredded sharp cheddar cheese; divided
—Season to taste: salt, pepper, garlic powder & Cajun seasoning
DIRECTIONS
1. Peel & quarter potatoes. Try and ensure each chunk is the same size so the potatoes cook evenly.
2. Transfer potatoes to a pot and add chicken broth; enough to cover potatoes.
3. Boil until tender.
4. Drain and transfer to mixing bowl.
5. Add all other ingredients, including 1 c of shredded cheddar and mix.
6. Fold in seasonings.
7. Transfer mashed potatoes to a greased casserole dish.
8. Top with 1 c of shredded cheddar cheese.
9. Bake for 20 min at 400 degrees.
10. Add green onions and chopped bacon.
