Easy Mother’s Day Breakfast

I love making this when I want something filling but simple and it’s great for Mother’s Day breakfast or brunch at home.

🥔 Breakfast Skillet Base
Ingredients:
* 2 cups small diced potatoes
* 1 bell pepper (diced)
* ½ onion (diced)
* 1 cup breakfast sausage
* Salt & pepper to taste
* Optional: garlic powder, paprika
Instructions:
1. Heat a pan over medium heat with a little oil
2. Cook potatoes until golden and tender
3. Add sausage and cook until browned
4. Stir in bell peppers and onions
5. Season to taste and cook until everything is softened

🍳 Eggs
Ingredients:
* 3–5 eggs (depending on pan size)
Instructions:
1. Make small wells in the skillet mixture
2. Crack eggs into each space
3. Cook until whites are set
✨ I like mine over easy or sunny side up so the yolk stays runny!
