### Strawberry Wafer Cupcakes
#### Ingredients:
- Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- Strawberry Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup strawberry puree or jam
- Pink food coloring (optional)
- Toppings:
- Strawberry syrup
- Crushed strawberry wafer cookies
- Whole strawberry wafer cookies for garnish
#### Instructions:
1. Preheat Oven:
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
2. Make Cupcakes:
- In a bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
- Divide the batter evenly among the cupcake liners.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before frosting.
3. Prepare Frosting:
- Beat butter until creamy.
- Gradually add powdered sugar, beating until smooth.
- Mix in strawberry puree or jam and a few drops of pink food coloring if desired.
4. Assemble Cupcakes:
- Pipe or spread strawberry frosting onto cooled cupcakes.
- Drizzle with strawberry syrup.
- Sprinkle crushed wafer cookies on top.
- Garnish with a whole strawberry wafer cookie.
