Easy dinner night recipe
You can not go wrong with this easy cheesy chicken rice recipe! The side salad was a great addition and a wow factor of homemade croutons.
What you need:
Chicken thighs
Preferred type of rice (I used basmati rice)
Yellow onion
Taco seasoning
I’m a prep first kind of person when it comes to meals. I like to have everything ready and just throw it in when it’s at that step.
Prep is super easy you’re gonna dice up a yellow onion. Was and soaking your rice for about 30 mins. Last season your chicken with taco season, homemade or store bought is fine.
Once you knock those 3 things were ready to go.
I do a 2 to 1 ratio with water and rice. That way I can make more or less depending on how many people I’m cooking for. Once the water is boiling I put my chicken thighs in.
Let that cook about 20-25 mins and stir often as the rice and chicken will stick and burn.
Once it’s done add shredded cheese, mix, and than you’re done!
