One of the highlights was the use of Snake River Farm Wagyu beef and dry-aged Coghlan Cottage pork loin, both cooked to perfection with thoughtful accompaniments like charred carrots and grilled leek. The balance of flavors was exquisite, especially the combination of smoky, savory meats with bright, fresh vegetables and unexpected touches like the miso butterbur and roasted green tea semi-freddo dessert. The attention to detail extended to the side dishes—crispy sablefish bone crisp and delicata squash with coconut curry created layers of texture and taste that complemented the main courses without overpowering them. The locally made bread paired with sakura butter, delicately infused with cherry blossoms, was a beautiful nod to seasonal ingredients.
