best Jamaican jerk chicken (summer recipe) 🇯🇲🌺

Summer Recipe # 4: Jamaican Jerk Chicken 🇯🇲🌺 a favorite summer grilling recipe of mine! The chicken comes out so crispy, juicy, and flavorful. I recreated my momma’s amazing jerk marinade with my own citrus twist. You can either bake these or put them in the grill, regardless it will be sure to impress anyone this summer!

- 4 leg quarters (4 thighs, 4 drumsticks)

- Salt

Momma’s Jerk Marinade:

- 1 large white onion, quartered

- 2 scallion bunches, chopped

- 2 habanero peppers or 1 scotch bonnet pepper

- 10 - 12 whole garlic cloves

- 1/3 cup fresh lime juice

- 1/3 cup fresh orange juice

- 1/2 cup low sodium soy sauce

- 1/2 cup brown sugar

- 2 tablespoons white vinegar

- 1 tablespoon all spice powder

- 1 teaspoon cinnamon powder

- 1/2 teaspoon freshly grated nutmeg

- 1 tablespoon coriander powder

- 1 1/2 teaspoon black pepper

- Salt to taste.

Directions:

1. Clean and prep the chicken. Cut a few slits into each one. Can leave the skin on or off.

2. To a blender, add all the marinade ingredients. Blend until smooth. Taste for salt, add if needed.

3. Season each chicken piece with salt, back and front. Cover with a good amount of the marinade, about 2/3 of the marinade. Add the leftover into an airtight container and keep in fridge for up to 2 weeks, 3 months if you freeze it.

4. Massage well and marinate OVERNIGHT.

5. Bake in a preheated 400°F oven for 50 minutes, basing every 20 minutes. Broil for the last 3 - 6 minutes.

6. Serve immediately with coconut rice and your choice of sides. Enjoy!
