Easy Chicken Tikka Masala 🥘🍋✨

This recipe is inspired by my mom’s chicken tikka masala with my own easier twist! It’s rich, creamy, full of warm spices, and honestly one of my favorite comfort meals. Pair it with fluffy rice or warm naan and you’ve got the kind of dinner that makes you cancel your takeout order.

🥘 Ingredients:

• 1½ lbs boneless skinless chicken thighs, cubed

• ½ sweet onion, diced

• 3 tbsp tomato paste

• 3 garlic cloves, minced

• 1 green chili, whole or diced

• 1 tbsp fresh grated ginger

• 1½ tsp garam masala

• 1½ tsp Kashmiri chili powder

• 1½ tsp coriander

• 1½ tsp turmeric

• 15 oz tomato sauce

• 1 cup chicken stock

• Salt & pepper to taste

• ½ cup heavy cream

• Lemon juice

• Fresh cilantro

Directions:

1. Season chicken with salt and pepper. Cook with onion in a little oil until lightly golden.

2. Stir in tomato paste, garlic, ginger, green chili, and spices. Cook until fragrant.

3. Add tomato sauce and chicken stock. Simmer 10 to 15 minutes.

4. Stir in heavy cream, then finish with lemon juice and cilantro.

5. Serve with white rice or warm naan. Enjoy!
