I usually start by pouring my dressing first — balsamic vinaigrette or olive oil with lemon are my go-to flavors because they add just the right zing without overpowering the other ingredients. Next, layering dense vegetables like chickpeas, corn, edamame, baby tomatoes, pickled onions, purple cabbage, carrots, and bell peppers creates a solid base that won’t get soggy too soon. These veggies also provide a mix of fiber, protein, and vibrant colors which make each jar visually appealing and nutrient-rich. Finally, I top the salad with fresh greens such as lettuce and spinach, and sprinkle a handful of nuts or seeds like sunflower seeds, pumpkin seeds, or hemp hearts. These toppings add a satisfying crunch and healthy fats that keep me full longer. One tip I learned is to keep the lettuce and spinach at the top to prevent wilting, and the dressing at the bottom so everything stays crisp until you’re ready to eat. When meal prepping, prepping multiple jars in advance saves me tons of time during busy weekdays. Plus, mason jar salads are completely customizable—whether you want to add some shredded chicken, quinoa, or swap out veggies depending on what’s in season. Overall, mason jar meal prep is a perfect way to maintain healthy eating habits on a tight schedule. It’s fast, flavorful, and gives you a nutritious meal to grab and go—good for the body and the soul.
