Ingredients:

3–5 lbs thinly sliced onions

2 (32 oz) boxes beef stock

1 bottle Guinness stout

1 bunch fresh thyme (whole)

2–3 bay leaves

6–8 cloves garlic, minced

2–3 tbsp flour

Salt + pepper

~1 tbsp sugar (plus more to taste)

Worcestershire sauce (few dashes up to ¼ cup)

Crusty bread, toasted

Swiss + provolone cheese

Directions:

1. Add onions to pot with salt + sugar (~1 tbsp each, measure with your heart).

2. Caramelize ~40 minutes, stirring every 10 minutes.

3. Add minced garlic, cook 2 minutes.

4. Stir in flour, cook 2 more minutes.

5. Pour in Guinness, simmer 1 minute (it’ll thicken).

6. Add beef stock, thyme (whole bunch), bay leaves, salt + pepper.

7. Simmer 20 minutes.

8. Add Worcestershire (to taste) + more sugar if needed.

9. Simmer 20–30 more minutes.
