Jalapeño Popper Topped Chicken
Ingredients
* 2 lbs chicken breasts, sliced into thinner cutlets (optional, but recommended)
* 1 lb bacon, chopped
* 1 (8 oz) block cream cheese, softened
* 1 bag shredded cheddar cheese, divided
* 1 bunch green onions, sliced, divided
* Chopped jalapeños (fresh or jarred—I prefer jarred), as much or as little as you like
* Tony Chachere’s seasoning
* Garlic powder
* Salt
* Black pepper
Instructions
1. Preheat your oven to 385°F.
2. Chop the bacon into bite-sized pieces and cook until crispy. Drain the grease. Set a little bacon aside for the final topping.
3. If desired, slice the chicken breasts into thinner cutlets. Arrange them on a baking sheet.
4. Season both sides of the chicken with Tony Chachere’s seasoning, garlic powder, salt, and pepper (or your favorite chicken seasoning).
5. Bake until the chicken is almost cooked through. The cooking time will depend on the thickness of your chicken.
6. While the chicken bakes, make the topping:
* Soften the cream cheese (about 30 seconds in the microwave works well).
* Stir in a little more than half of the shredded cheddar, reserving the rest for topping.
* Mix in most of the cooked bacon, saving some for the end.
* Stir in the chopped jalapeños.
* Fold in most of the sliced green onions, saving a little for garnish.
7. Remove the chicken from the oven and top each piece with a generous scoop of the jalapeño popper mixture. Sprinkle the remaining cheddar cheese over the top.
8. Return to the oven for 15 minutes, or until the cheese is melted, bubbly, and the chicken reaches an internal temperature of 165°F.
9. Finish by sprinkling the reserved crispy bacon and green onions over the top before serving.
This is amazing served with mashed potatoes, rice, roasted vegetables, or a simple side salad. #dinner #easydinner #dinnerideas #kitchenhacks #cheesy
If you're a fan of combining spicy and cheesy flavors, this Jalapeño Popper Topped Chicken recipe truly hits the mark. One of the things I love about making this dish is how versatile it is—you can easily adjust the spice level by adding more or less jalapeños, whether fresh or jarred. For a milder taste, remove the seeds from the jalapeños before mixing them into the cream cheese blend. When preparing the chicken, slicing the breasts into thin cutlets not only helps them cook faster but also makes for a more even bake under the cheesy topping. Using Tony Chachere’s seasoning adds a nice Cajun flair, but feel free to substitute with your favorite chicken spices or a simple blend of garlic powder, salt, and pepper if you prefer. One kitchen hack that worked well for me was microwaving the cream cheese for just 30 seconds. This softens it perfectly without making it runny, ensuring a creamy, dreamy topping. Mixing in most of the crispy bacon beforehand infuses the filling with a smoky flavor that’s absolutely addictive, while reserving some bacon for garnish adds a satisfying crunch on top. After baking the chicken with the popper mixture and extra cheddar cheese, I like to finish the dish with fresh green onions. Their mild bite beautifully complements the richness of the cream cheese and the heat from the jalapeños. For sides, mashed potatoes, rice, or roasted vegetables all pair wonderfully with this dish. You can also serve it alongside a crisp green salad for a lighter option. Overall, this recipe is fantastic for a quick weeknight dinner that feels indulgent without requiring complicated steps or rare ingredients. Lastly, don’t hesitate to customize it further. Some folks add a sprinkle of smoked paprika for extra depth, or swap cheddar for pepper jack cheese to amp up the spice. Whichever way you try it, this Jalapeño Popper Topped Chicken is bound to become a go-to comfort food in your household.
