Jalapeño Popper Topped Chicken
Ingredients
* 2 lbs chicken breasts, sliced into thinner cutlets (optional, but recommended)
* 1 lb bacon, chopped
* 1 (8 oz) block cream cheese, softened
* 1 bag shredded cheddar cheese, divided
* 1 bunch green onions, sliced, divided
* Chopped jalapeños (fresh or jarred—I prefer jarred), as much or as little as you like
* Tony Chachere’s seasoning
* Garlic powder
* Salt
* Black pepper
Instructions
1. Preheat your oven to 385°F.
2. Chop the bacon into bite-sized pieces and cook until crispy. Drain the grease. Set a little bacon aside for the final topping.
3. If desired, slice the chicken breasts into thinner cutlets. Arrange them on a baking sheet.
4. Season both sides of the chicken with Tony Chachere’s seasoning, garlic powder, salt, and pepper (or your favorite chicken seasoning).
5. Bake until the chicken is almost cooked through. The cooking time will depend on the thickness of your chicken.
6. While the chicken bakes, make the topping:
* Soften the cream cheese (about 30 seconds in the microwave works well).
* Stir in a little more than half of the shredded cheddar, reserving the rest for topping.
* Mix in most of the cooked bacon, saving some for the end.

7. Remove the chicken from the oven and top each piece with a generous scoop of the jalapeño popper mixture. Sprinkle the remaining cheddar cheese over the top.
8. Return to the oven for 15 minutes, or until the cheese is melted, bubbly, and the chicken reaches an internal temperature of 165°F.
9. Finish by sprinkling the reserved crispy bacon and green onions over the top before serving.
