🧀 Fried Mac and Cheese

Ingredients:

For the Mac and Cheese:

• 2 cups elbow macaroni

• 2 tablespoons butter

• 2 tablespoons all-purpose flour

• 1 cup milk

• 2 cups shredded sharp cheddar cheese

• Salt and pepper to taste

For Frying:

• 2 eggs

• 1 cup all-purpose flour

• 1½ cups breadcrumbs (Panko or regular)

• Vegetable oil (for frying)

Instructions:

1. Cook the Macaroni:

• Boil macaroni according to package directions. Drain and set aside.

2. Make the Cheese Sauce:

• In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.

• Slowly whisk in the milk, stirring constantly until thickened (about 3–4 minutes).

• Stir in the cheese until melted. Season with salt and pepper.

• Add the cooked macaroni and mix well. Let cool completely, then refrigerate for at least 2 hours (overnight is best) until firm.

3. Form the Balls:

• Scoop out spoonfuls of the cold mac and cheese and roll into balls (about 1½ inches wide).

• Place on a baking sheet and freeze for 30–60 minutes to help them hold shape.

4. Bread the Balls:

• Set up three bowls: flour, beaten eggs, and breadcrumbs.

• Roll each ball in flour, dip in egg, then coat in breadcrumbs. For extra crunch, repeat the egg and breadcrumb coating.

5. Fry:

• Heat oil in a deep pan to 350°F (175°C).

• Fry balls in batches for 2–3 minutes or until golden brown.

• Drain on paper towels.

6. Serve:

• Serve hot with dipping sauces like ranch, marinara, or spicy aioli.
