I am tired of eating out. Hardee’s/Carl Jr’s two days in a row was much for me! Yeah, it tasted pretty good in the moment, it’s one of those things you regret when the moment is over. I know it will keep my weight up, my body systems inflamed.
So I went to Food City. It’s a grocery store chain in TN, Virginia, and Kentucky. It is one of the two best for produce depending on what you are looking for. I wanted a clean lunch. Mostly.
What to pair rotisserie chicken with? I planned to get out some chipotle sauce , but by the time I got home& unloaded the groceries in the heat, I just needed to eat so I could take my MS pills. I didn’t let myself buy chips at the store bc that’s normally what I would have eaten with the chicken.
But I have been reading up on going gluten free and what grains I can still eat. Corn tortillas are acceptable as is anything made with it, but I want to check that more. So I got 2 microwaveable bowls of quino. (I DID cringe as just wrote microwaveable quinoa. Qinoa is from South & Central America. I’m going to put my Spanish teacher hat on a minute to tell you how to pronounce it without sounding like al you don’t belong on the health food aisle. Key-no-ah. Just say it fast all together & you will be good
The next pic I have mixed feelings about. Another Coke, but on the upside I had for supper last night and half for lunch today. I REALLY want to kick that Coke habit. I’m going to get more creative on that front soon I hope!
... Read moreI totally get that feeling of needing a quick, easy meal, especially after a long day. That store-bought rotisserie chicken is a lifesaver, right? It's been a game-changer for me when I'm trying to avoid those fast-food regrets. But beyond just convenience, I've learned a few things to make sure it's also a genuinely good and healthy choice.
First off, when I pick out my rotisserie chicken, I always give it a quick check. I look for one that still looks fresh and juicy, with crispy skin, and ideally, I try to grab one that's just come out or is still warm. If it's been sitting for a while, the quality can really drop, and nobody wants a dry, questionable chicken! Once I get it home, I make sure to refrigerate any leftovers promptly. Food safety is super important, especially when you're relying on pre-cooked options. I usually shred the chicken as soon as it cools down a bit, making it easier to portion out for future meals and ensuring it cools thoroughly.
Now, let's talk about making that rotisserie chicken shine in a healthy way! Pairing it with quinoa, like I did, is brilliant. Quinoa is such a powerhouse grain – naturally gluten-free and packed with protein and fiber. But don't stop there! I love loading up my plate with a huge variety of roasted veggies like broccoli, bell peppers, or sweet potatoes. A big, vibrant salad with a homemade vinaigrette is another fantastic option. It adds so much freshness and extra nutrients without much effort. Sometimes, I'll even turn the shredded chicken into lettuce wraps with some fresh herbs and a light peanut sauce for a different flavor profile.
Speaking of choices, that struggle with wanting to kick the Coke habit is so real! It's one of those things that feels good in the moment but can leave you feeling sluggish later. I've been experimenting with sparkling water infused with fresh fruit like berries or cucumber and mint – it satisfies that craving for fizz without all the added sugar. Even plain water can be super refreshing if you make it a habit. Small swaps like these really add up in the long run.
And for my fellow dark chocolate lovers, isn't it amazing how a little square can feel so indulgent yet still be good for you? Knowing it helps with inflammation and even my period migraines makes it a guilt-free treat. It’s all about finding those little joys that align with your health goals.
My journey to eating cleaner is definitely a work in progress. It's about being mindful of what I put into my body, recognizing those 'regret' foods, and finding delicious, practical alternatives. Whether it's choosing a good quality rotisserie chicken, trying new gluten-free grains, or finding healthier drink alternatives, every small step makes a difference in feeling better and managing overall health. It shows that eating well doesn't have to be complicated or boring; it just takes a bit of planning and conscious choices.
