Creamy Garlic Chicken with Roasted Baby Potatoes
Ingredients
For the Roasted Potatoes:
• 1½ lbs baby potatoes, halved
• 2 tbsp olive oil
• 1 tsp garlic powder
• ½ tsp paprika
• Salt and black pepper, to taste
For the Creamy Garlic Chicken:
• 2 tbsp olive oil
• 4 boneless, skinless chicken breasts
• Salt and pepper, to taste
• 1 tsp Italian seasoning
• 4 cloves garlic, minced
• 1 cup heavy cream
• ½ cup chicken broth
• ½ cup grated Parmesan cheese
• 1 tbsp butter
• 1 tbsp chopped fresh parsley (for garnish)
Directions
1. Roast the potatoes
Preheat oven to 400°F (200°C).
Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
Spread on a baking sheet and roast for 25–30 minutes, until golden and crisp.
2. Cook the chicken
While the potatoes roast, heat olive oil in a large skillet over medium-high heat.
Season chicken with salt, pepper, and Italian seasoning.
Sear for 5–6 minutes per side, until golden and cooked through. Remove and set aside.
3. Make the creamy garlic sauce
In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
Pour in chicken broth and scrape up any browned bits.
Add heavy cream and Parmesan, stirring until smooth and slightly thickened.
4. Combine & serve
Return chicken to the skillet, spooning sauce over the top.
Simmer for 2–3 minutes to soak up all that garlicky goodness.
Serve chicken with roasted baby potatoes and a sprinkle of fresh parsley.
