An easy one pot spicy sausage n shrimp rice 🍚

This is one of my favorite dishes to make. It’s so easy and quick to clean up.

I usually don’t measure so here’s an estimate of what I used to make this..

Ingredients:

1 cup rice

1 3/4 cup chicken broth

2 tbsp butter

1 lb shrimp (seasoned with Cajun seasoning)

6 oz spicy sausage

Diced peppers and onions

3/4 cup corn nibblets (seasoned with black pepper)

1/2 can of 14 oz diced tomatoes so about 7oz

Seasoning used- onion & garlic powder, chili powder, Cajun seasoning, paprika

That’s exactly why my 'Spicy Sausage n Shrimp' one-pot rice has become a staple in my cooking routine! The original recipe is fantastic for its simplicity, but I’ve picked up a few tricks and variations over time that make it even more versatile and perhaps even more delicious, if that's possible! It's all about making that one pot work for you, making your cooking experience as enjoyable and stress-free as possible. When I first started making this, I stuck strictly to the recipe, but over time, I’ve found that a few tweaks can really elevate the dish. For the spicy sausage, while the original calls for a general spicy sausage, I’ve experimented with different types. Andouille sausage gives it a really authentic Louisiana kick, similar to what you’d find in some jambalaya or even a simplified dirty rice with shrimp and sausage. Chorizo also works wonderfully if you’re looking for a smoky, paprika-rich flavor. Don't be afraid to try different varieties to find your favorite – each one brings its own unique character to the dish! And let’s talk about the shrimp! The key to perfectly cooked shrimp is not overdoing it. I usually add my seasoned shrimp in the last 5-7 minutes of cooking, just until they turn pink and opaque. This ensures they stay juicy and tender, not rubbery. If you're using frozen shrimp, make sure to thaw and pat them dry thoroughly before seasoning them with that amazing Cajun seasoning. Sometimes, I even give them a quick sear in a separate pan for a minute or two before adding them to the pot at the end, just to get a bit of extra caramelization. For the rice, I've found that using a good quality long-grain rice makes a huge difference in the final texture. And while the chicken broth ratio is spot on, sometimes I'll swap out a quarter cup of broth for a dry white wine or even a bit of tomato juice to deepen the flavor even further. The diced tomatoes already bring a lovely tang, but that extra liquid can really make it sing. And for those who love a bit more garlic (like me!), I sometimes throw in an extra crushed clove or two right when I’m sautéing the peppers and onions, enhancing that aromatic base. Beyond the core ingredients, this dish is incredibly forgiving when it comes to adding more vegetables. While corn, peppers, and onions are classic, I’ve thrown in diced celery, sliced okra, or even a handful of fresh spinach towards the end for extra greens. It’s a great way to use up whatever you have in the fridge and boost the nutritional value without compromising on flavor. Sometimes I also add a pinch of smoked paprika or a dash of hot sauce right at the end for an extra layer of spice and smokiness. This 'Spicy Sausage n Shrimp' one-pot wonder truly epitomizes easy and flavorful cooking. It’s perfect for a busy weeknight, but delicious enough to impress guests. And the best part?
