My Go-To Crockpot Dinner for Lazy Nights

Some nights, I just need dinner to handle itself. So I tossed everything in the crockpot, walked away, and a few hours later…creamy Chicken Enchilada Soup was waiting. Perfect for busy days or lazy nights.

INGREDIENTS:

- 2.5 cups cooked chicken

- 2 (15 oz) cans white beans, rinsed and drained

- 1/2 onion, diced

- 1 cup corn

- 1 (4 oz) can green chiles

- 2 (10 oz) cans enchilada sauce

- 1 tsp onion powder

- 1 tsp garlic powder

- 1 tsp chili powder

- Salt & pepper, to taste

- 4 oz cream cheese, softened

- 4 cups chicken broth

Topping Ideas:

- Shredded cheese

- Sour cream (for more protein try cottage cheese)

- Cilantro

- Jalapenos

- Spring Onions

- Avacados

- Tortilla strips

DIRECTIONS:

1️⃣ To a crockpot, add chicken, white beans, onion, corn, green chiles, enchilada sauce, cream cheese, seasonings, and chicken broth. Mix well and place lid on crockpot.

2️⃣ Cook on high for 3 hours, or until the soup is hot.

3️⃣ When the soup is ready, add your toppings and enjoy!
