Peach Cobbler Sourdough loaf

Dough

•100 g starter

•350 g water

•475 g bread flour

•10 g salt

•30 g sugar

•1 teaspoon cinnamon

Let set covered 45 mins

For the first set of stretch & folds I added in

•freeze dried pieces of peaches

•granola (I made some the night before)

•Carmel bits

Let your heart guide you

Did 3 more stretch and folds 30-45 minutes apart

Let set covered until doubled in size and small bubbles are starting at the top and slightly jiggly (proofed)

Shape your dough.

Dump it from your bowl barley pulling in the side and flipping it over letting gravity work

pull out to the biggest rectangle without ripping

My inclusions

•peach preserves

•brown sugar

•freeze dried peaches

•granola

•Carmel bits

( measure with your heart)

Place in basket in the fridge for couple hours to make scoring easier

Preheat Dutch oven 475 degrees

Place dough with a couple ice cubes in Dutch oven for 30 mins with lid on

Lower temp to 450 degrees for at least 20 mins temp your dough if it’s not up to temp (I like 209) place lid back on for 10-20 mins

Wait 1 hour before cutting

Overproofed Sourdough loaf or Perfection?
Everyone has their own goal when baking sourdough bread. Some like their crumb to be very hole-y and open, others prefer a slightly denser loaf, but I find that more and more people like a fluffy, closed crumb. One where the butter and jam won’t seep through the holes yet it’s very soft and fluffy.
