Beef & Broccoli

Ingredients:

For the Marinade:

   •   1 lb (450g) beef (flank steak or sirloin), thinly sliced

   •   2 tablespoons soy sauce

   •   1 teaspoon cornstarch

   •   1 teaspoon sesame oil (optional)

For the Stir-Fry:

   •   1 head of broccoli, cut into bite-sized florets

   •   3 cloves garlic, minced

   •   1-inch piece of ginger, grated

   •   2 tablespoons vegetable oil

   •   1/4 cup water or beef broth

For the Sauce:

   •   3 tablespoons soy sauce

   •   2 tablespoons oyster sauce

   •   1 tablespoon brown sugar or honey

   •   1 teaspoon cornstarch

   •   1/4 teaspoon black pepper

   •   1 teaspoon sesame oil (optional)

Instructions:

1. Marinate the Beef: 🥩

      •   In a bowl, combine the beef slices with soy sauce, cornstarch, and sesame oil. Let it marinate for 15–20 minutes.

2. Prepare the Broccoli: 🥦

      •   Bring a pot of water to a boil. Blanch the broccoli florets for 2 minutes, then drain and rinse with cold water to keep them crisp and vibrant.

3. Make the Sauce:

      •   In a small bowl, mix soy sauce, oyster sauce, brown sugar, cornstarch, black pepper, and sesame oil. Stir well and set aside.

4. Cook the Beef:

      •   Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

      •   Add the marinated beef in a single layer and stir-fry for 2–3 minutes until browned. Remove the beef and set aside.

5. Stir-Fry the Aromatics and Broccoli:

      •   In the same skillet, add another tablespoon of oil. Sauté garlic and ginger until fragrant (about 30 seconds).

      •   Add the broccoli and stir-fry for 2 minutes. Pour in the water or beef broth and cover the pan. Let the broccoli steam for 2 minutes until tender.

6. Combine:

      •   Return the beef to the skillet and pour the prepared sauce over the beef and broccoli.

      •   Stir everything together and cook for 1–2 minutes until the sauce thickens and coats the beef and broccoli.

7. Serve: 🍽️

      •   Serve hot over steamed rice or noodles.
